Yummy Tortellini Soup

Since I made this blog a while ago and it has yet to be written on (except for Chelsea a while ago) I thought I'd kick it off with a yummy Tortellini Soup! It's oh so easy and delicious!


Ingredients: 
3 Tbs. olive oil
4-5 cloves garlic (depending on how much you like)
1 large whole onion-chopped
4 tsp. oregano
12-14 cups chicken broth (i use bullion and depending on how liquid-y you like it.. use more or less)
3 (15 oz) cans whole tomatoes
salt and pepper to taste
27 oz. tortellini (i use the frozen kind. it's a lot cheaper)
7 cups fresh spinach-chopped/torn


Directions:
In large pot, heat oil over medium heat. Add garlic and onion. Cook 5 minutes/until tender. Add oregano, broth, tomatoes (when adding tomatoes, i just crush them in hand as i put them in. or you can crush them with the spoon once they're tender but it seems harder for me to do that), and salt &pepper. Bring soupt to a boil and then add the tortellini in. Cook 5-6 minutes, add spinach and cook an additional 1-2 minutes. Take pot off heat and EAT! It's so yummy and takes hardly any time.

Memories...

This is a great place for us to share recipes, spiritual experiences and things that can help lift and build us up. It is all about family and I am grateful to be part of this wonderful and amazing heritage as a James Girl. It is truly a curse, but one I would never trade. I love you all!!!
